Yokan is a traditional Japanese dessert that has been around for hundreds of years. Yokan used to be made with boiled sheep gelatin, but has over the years come to be made red bean paste, agar and sugar instead. Yokan have a traditionally very sweet taste and are often served at tea ceremonies to contrast the bitter matcha green tea.
